Combining the asparagus with carrots is the idea from my son, Rich, whose easy recipes have inspired me as well. Actually, it was after Rich shared his roasted asparagus recipe with me, I started roasting all sorts of vegetables.
This was certainly not a German tradition that I learned from my Mutti. And ... it has definitely become a favorite method for me.

Asparagus Season in Germany
Late spring is asparagus season in Germany. Many restaurants even have a special "Spargel" menu that only has asparagus dishes on it.
Most asparagus sold in Germany is the white variety. It needs to be peeled and is cooked longer than the green variety that's sold in Canada and the US.
If you want to roast the white asparagus, be careful that you don't let it brown. It'll turn bitter. The green asparagus, on the other hand, tastes absolutely delicious when browned!
Roasting Vegetables
Learning how to roast asparagus and other vegetables heightens the flavor as the water is evaporated away. Daily eating vegetables that are especially tasty is such an easy way to include vitamins, minerals, and fiber into the diet.
This baked asparagus recipe is just one way to do so.

Oma's Easy Roasted Asparagus Recipe
This easy asparagus recipe, aka Spargel, is a great company dish that will find its way to your everyday menu as well. Quick to prepare, its delicious flavor is a great addition to any meal.

Servings:
Makes 4 - 6 servings
Ingredients:
- 2 pounds fresh asparagus
- ¼ to ½ cup seasoned breadcrumbs
- ¼ to ½ cup olive oil
- ¼ cup ground Parmesan cheese
- pepper, freshly ground
Instructions:
- Preheat oven to 400°F.
- Pour about ¼ cup olive oil onto a cookie sheet with a rim.
- Wash asparagus thoroughly and lay on towel to dry. Snap off bottom end, (peel stem if desired), and lay onto cookie sheet.
- Drizzle olive oil over all, gently turning asparagus so that they are all coated with oil.
- Sprinkle with breadcrumbs and then Parmesan cheese.
- Season with freshly ground pepper.
- Bake for about 12 to 15 minutes, until done to your liking.
Notes/Hints:
- This tastes really good with some carrot spears roasted alongside the asparagus
