INGREDIENTS FOR PORTUGUESE BREAD SOUP

  • Bread - Stale bread cut into small pieces.
  • Water and a few drops of vinegar - To poach the eggs.
  • Eggs - Poached eggs.
  • Olive oil - Adds flavor to the recipe.

HOW TO MAKE PORTUGUESE BREAD SOUP

Step 3: In a saucepan, pour the water and a few drops of vinegar. Boil on a medium-high heat. When starts boiling, add the eggs and reduce to medium heat. Let the eggs poach for about 3 to 4 minutes. Step 4: Pour the eggs cooking water over the bread and the poached eggs.

    • 8 cloves of garlic
    • Coriander (to taste)
    • 1 teaspoon salt
    • 1/2 teaspoon pepper
    • 450 grams (1 pound) stale bread
    • 1.5 liters (about 6 cups) water
    • 4 eggs
    • 150 ml (2/3 cup) olive oil
    • A few drops of vinegar

    Directions

    1. In a bowl, mix with a fork the chopped coriander, grated garlic, olive oil, salt and pepper; set aside.

    Thank you. This is the real soup that I had on my first visit to Portugal. The other recipes I’ve seen on the Internet are too fussy, too inauthentic. There’s no chicken stock, no cooked garlic. Just simple, excellent, heart-warming soup, as presented here.
